Basic Bread Pudding - Bobbie Dalquist
8 cups bread cubes lightly
packed
1 cup brown sugar (packed)
1 teaspoon nutmeg
½ teaspoon salt
1 cup raisins (optional)
Spread bread cubes evenly in large casserole dish. Sprinkle evenly
with brown sugar, nutmeg, salt, then raisins.
4 cups milk
½ cup butter
4 eggs, beaten
Measure milk into 1 qt.measuring cup. Add butter. Microware at High (10)
for 4 to 6 minutes, until butter is melted and milk is warm. Rapidly stir in
eggs with a fork and mix well. Pour over bread cubes in dish.
Microwave at Medium High (7) 9 to 12 minutes. When cooked, center may still
be slightly soft but it will set up as pudding cools. Serve warm or chilled.
